Food is excellent and diverse — not just resort food. Juanillo Beach is the best in the area, which Kat will love. Adults-only keeps it relaxed. Luxury without being stuffy.
Falls comfortably in your $5K budget at ~$3,400–4,200 total. And you'd be celebrating your anniversary on one of the best beaches in the Caribbean.
